
I’ve had these photos in my phone for the longest time and made these Spanish croquettes during the 1st lockdown!
During lockdown I ticked off a monotonous task of cutting out and placing in a folder, recipes from supermarket magazines that I wanted to try so they’d all be in one place. Now I add to it and it’s fab inspiration for dinner ideas.
The below recipe I am going to share with you is one from the LIDL magazine.

Ingredients:
MAKES 18-20 | PREP TIME 25 MINS | COOK TIME 10-15 MINS
1. Melt 75g butter in a pan and whisk in 100g plain flour.

2. Over a gentle heat, gradually whisk in 500ml milk until you have a very thick white sauce (similar to when making macaroni cheese).

3. Add 50g breadcrumbs, 90g chopped ham, 50g grated cheddar, 50g torn mozzarella and 2 tbsps chopped parsley and stir until melted. Chill for 4 hours.

Scoop up spoonfuls of the mixture and roll into 18-20 oval or sausage shapes. Roll each first in plain flour, then coat in beaten egg, then roll in breadcrumbs.
Deep fry until golden *I did this in a pot filled with hot oil on the hob because I don’t have a deep fat fryer but be careful if you’re doing it this way *

This recipe is so easy and great for batch cooking and the croquettes freeze really well. I defrosted then heated them through in the oven when I fancied some.
